Liquid‒liquid extraction is an essential separations technology, but its utility is limited by a deleterious phase transition where the nonpolar organic phase splits into two phases. The mesostructure of the organic phase is dominated by critical fluctuations. The correlation length maxima of those fluctuations form a ridge that extends above the critical point associated with the phase instability.
