Recipe: Fresh Tomato Salsa

paper bag o' tomatoes4 or 5 tomatoes

1 or 2 bell peppers

1/2 to 1 hot pepper, e.g. jalapeno

1 onion – preferably white or red

5 or 6 cloves garlic

juice of 1 lemon or lime

1 to 2 tsp. salt

few sprigs of fresh cilantro – approx. 50 leaves.

Cut up the tomatoes, peppers and onion into large chunks, then throw everything in the food processor or blender and chop until it’s the right consistency – still kind of chunky, not too smooth.  Drain off excess liquid — a wire screen colander works well.
